IOWA MISO is alive, unpasteurized, and fermented food. All IOWA MISO has been made with organically grown Iowa organic soybeans, my own rice-koji, and high quality sea salt. It is not mass produced, but carefully made. I'm making it all by myself, so the amount I can produce is limited. So I decided to start Friends of IOWA MISO. This means that I, the creator of IOWA MISO, will send it directly to the customer. Friends of IOWA MISO order one or more of the standard boxes with one or two different kinds of miso (see below) to share with their own circle of friends or to keep in the refrigerator/freezer to always have a supply on hand.

“IOWA MISO Amber” refers to the youngest miso I make. It contains about 11% salt and has fermented for one year. It is the sweetest miso I provide. “IOWA MISO Ruby” refers to miso that contains about 12% salt and has fermented for two years. This is a riper miso, with a deeper color and taste, round on the tongue and a more complicated flavor. “IOWA MISO Gold” refers to miso that has been fermenting for three years or more. This is a robust flavored miso, especially good to use in combination with meat dishes or in sauces. It is also the miso with the greatest health benefits. For miso connoisseurs, it is the most complete form of miso in soups. In wine terms, it is like a deep Burgundy. Once I have a sufficient quality of this product I will inform my friends.
After purchasing IOWA MISO
IOWA MISO is alive and therefore, once received, it will continue to ferment unless kept in the refrigerator or freezer. In the refrigerator its shelf life will be about six months, while in the freezer it is at least one year (mark: miso will not freeze because of its low water activity and salt content). In Japan, it is recommended to keep large quantities of miso in the freezer, and a small quantity for daily use in the refrigerator.
